Low fat, low carb and frugal

 Just in case any of you are missing the food blogging; here’s today’s lunch.

One onion, finely sliced, one head of romaine lettuce finely shredded, three pieces of sun dried tomato with the oil patted off with a clean cloth and then cut into tiny pieces, stir together and set aside.

 Fry Quorn in the tiniest amount of oil you can get away with, keep moving to brown gently on every side.

 Mix together a teaspoon of paprika, a teaspoon of cumin and a quarter teaspoon of salt and then sprinkle over all the quorn, stir thoroughly. I use bottled lemon juice and after removing from the heat, I liberally splashed lemon juice all over it.

I made the dressing from the very low fat mayonnaise I have, it is also very low in carbs. I mixed the mayonnaise with equal amounts of lemon juice and a sprinkle of salt, I then spooned that over the quorn and salad. Very low fat, very low carbs, high in protein and cheap and still under £1 per person.

  1. Looks very tasty, I think the only change I would make would be to use a little of the sun-dried tomato oil to fry the quorn, just to intensify the flavour of the overall dish.

    A brilliant meal for the type of diet you are on and an excellent packed lunch idea for the next day.

  2. Looks yummy my dear. I'm still using up left over sandwich fillers from our picnic on Friday!

    We have bubble and squeak fro tea with left overs from yesterdays roast and I even made us a few extra puddings using the same amount as usual just being a little more frugal with the portions. Not too good for the diet I'm sure but a nice end to a great weekend.

  3. Hi FQ! My favourite misspelling of all time came from a child writing a story, who called one of the characters “an attractive broonet”–it works even better if you are Scottish(which I am). It's just the sophistication which is so NOT achieved.
